This Cajun, spicy, baked shrimp recipe is quick and easy to make. Excellent as an appetizer but can be a main dish using large or jumbo shrimp. There are about 30-35 medium size shrimp in a pound so adjust the number of shrimp for the number of people you are serving. In general, you should plan on about 1/3 pound of shrimp per person.
Be aware that shrimp is highly perishable and should not be used if they have a strong off-odor. In general, it is safer to buy frozen shrimp and keep it frozen. Defrost in the bottom of the refrigerator prior to cooking.
This recipe is adjustable to the number of servings you require. We found it simple to adjust for 12 people. You can remove the shells of the shrimp before cooking or cook with the shells intact. Many cooks believe cooking with the shells on adds flavor.
Finally, over cooked shrimp is tough and tasteless so take care not to over cook. Cook just until the shrimp curls and turns pink.
