Here's a simple, basic hot sauce for everyday use. Takes only about 15 minutes to make. If you substituted Tabasco peppers you would have the same recipe used to make the famous Tabasco hot sauce.
That's right. Most people are surprised to learn that Tabasco sauce only has 3 ingredients. Vinegar, salt and Tabasco peppers. Check the ingredients list on a bottle the next time you use Tabasco sauce.
However, real Tabasco sauce is aged in special containers for several years before it is on your supermarket shelve. So don't plan on this recipe making real Tabasco sauce.
However, we do have a Tabasco Sauce Recipe that is as close as you can come at home to making Tabasco sauce. But Tabasco peppers are difficult to find in stores and difficult to grow in home gardens (just my personal experience). So, we offer the following simple recipe that uses the more readily available Jalapeno pepper.
Caution: You should wear gloves when handling spicy peppers. Avoid touching face and especially eyes. Avoid breathing fumes of peppers when cooking or processing in a blender or food processor.
BASIC HOT SAUCE
Total time: 25 mins
Yield: 4 + cups
o 3 cups Distilled white vinegar
o 2 lb Cayenne or jalapeno peppers, chopped (seeds and stems removed or leave in for more spicy)
o 2 teaspoons Salt
1. Simmer vinegar, salt and peppers at a low boil for at least 5 minutes.
2. Pour mixture into a food processor and process until you get a smooth mixture.
3. Store in a glass bottle in a dark location and allow to age as long as your patience allows (at least 3 weeks). Strain when ready to use.
