The prized Vidalia onion is the star of this recipe. Unfortunately, Vidalias are grown in a limited area and are only available in stores a short time (typically May-August). So when they show up at your local market you should take advantage of them by using this recipe to make some Vidalia Onion Relish.
Growers of Vidalia onions boast that they are so sweet you can eat them like an apple. Well, we tried it and, guess what...it's true. Of course it taste like an onion but it is sweet and does not bring tears to your eyes like an ordinary onion would.
If Vidalia onions are unavailable, you can substitute other sweet onions, such as Wala Wala, which are usually more readily available.
