Many pickle recipes require pickling spices. You can buy pickling spices at most major markets or you can make your own with this recipe.
To use the spice mix this recipe makes, measure out the amount called for in the pickle recipe you are using and place in a square of cheesecloth. Then tie the ends of the cheesecloth together to seal. Add the spice cheesecloth to your brine as called for in the recipe you are using.
If you do a lot of pickling this recipe is fine as is. However, if you pickle very little, it makes more spice than you may use before going stale. If this is your situation, you can cut all ingredients by half and make about 2 cups, which will probably last you one entire summer of pickling.
