We often think of chicken wings as an appetizer but with this recipe if you add a few chicken legs you have a main course. Legs and wings are one of the least expensive parts of the chicken and while wings are more of a delicacy with little meat the legs are more meaty and filling.

Five Spice Chicken Wings

Yield: 24 servings


- 12 whole chicken wings (each cut into 2 pieces)
- 4 cups peanut or Canola oil (for frying)

- 1/2 tsp freshly grated ginger
- 1 cup light soy sauce
- 1/8 cup sherry or rice wine
- 1/2 tsp five spice powder
- all purpose flour, as needed (see instructions)


1. Cut each wing into 3 logical pieces. Discard tips keeping the two meatier parts.
2. Combine all marinade ingredients, except flour, in a large bowl. Then add flour, as needed, while stirring, to obtain a slurry similar to pancake batter. It should not be watery or thick and lumpy. It should be thick enough to stick to (coat) the chicken.
3. Place the chicken in the marinade and turn to coat on all sides. Marinade in the refrigerator for 30 minutes.
4. Heat the oil to 360 degrees F. Deep fry the wings until golden brown, about 5 min.
