Used in a variety of Cajun dishes, Tasso is a highly seasoned, spicy, intensely flavored smoked pork. You can make your own with this recipe.
The preferred cooking method is to use a smoker and cook on low heat. If you do not have a smoker you can use a grill but keep the meat to the side of the coals, not directly over the heat. You want to cook long enough to infuse the meat with a smoky flavor without over cooking.
