Creamy, nutty and fruity, this apple salad recipe may be served as a healthy dessert or refreshing salad. My mom always made this Apple Salad for Summer picnics. She called it the poor man's Waldorf Salad because if you added grapes, celery and lettuce you would, indeed, have a Waldorf. This recipe is simpler and more economical.

Nutty Apple Walnut Salad

Yield: 4 servings
- 6 medium size apples (cored, peeled and chopped into bite size)
- 1 cup chopped walnuts
- 1 cup sugar
- 1/3 cup raisins
- 2 tablespoon lemon or lime juice
- 1/2 tablespoon salt
- 1/2 cup mayonnaise
1. Combine all ingredients in a large bowl and mix well. Taste as you go and adjust flavor to your preference. This recipe is slightly sweet, slightly tart. If you want it sweeter, add sugar. If you like tart, add salt and lemon/lime juice.
2. Flavor will improve if chilled for 20 min. before serving.
