This Zucchini Bread may be made plain, with walnuts, with raisins or with walnuts and raisins. Although it is called "bread" it can be served as a dessert. If you want it sweeter, add 1/3 cup sugar instead of 2 tablespoons. This makes a very moist bread that keeps well. Very easy to make and comes out perfect every time.

Ingredients
* 3 eggs
* 1 cup vegetable oil
* 2 cups sugar
* 2 cups grated zucchini
* 2 tsp vanilla
* 3 cups all-purpose flour
* 3 tsp ground cinnamon
* 1 tsp baking soda
* 1/4 tsp baking powder
* 1 tsp salt
* 1/2 cup chopped walnuts
* 1/3 cup raisins (optional)
* 2 - 8x4 inch loaf pans

Directions
1. Preheat oven to 325 degrees F. Grease and flour two 8x4 inch loaf pans. Set aside.
2. In a large bowl, beat eggs until light and frothy. Mix in oil and sugar. Stir in zucchini and vanilla.
3. In a separate bowl, combine remaining ingredients. Raisins are optional.
4. Stir flour mixture into the the egg mixture. Mix well into a smooth batter.
5. Divide batter into prepared pans.
6. Bake 60-70 minutes (toothpick stuck into top should come out clean).
