Peanut Butter Waffle Recipe

As a child growing up in Alabama, I remember Sunday mornings with a special pleasure. That's when mom made waffles. And, I love waffles. She made peanut butter waffles, which as you will see from the recipe, are simply waffles with melted peanut butter. But they were so good. If you have little ones in the house, treat them to this special treat. They will love them.
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1 3/4 cups milk
3 egg whites beaten stiff
3 egg yolks beaten
2 tablespoon sugar
2 tablespoon cooking oil
1/2 tablespoon vanilla
Directions
1. Heat Waffle Iron and grease liberally with cooking oil (Crisco)
2. Combine all other ingredients except eggs and 1/2 cup of the milk (reserve 1/2 cup milk). Mix well
3. Beat egg yolks and pour into flour mix.
4. Beat egg white in separate bowl until stiff peaks form (looks like whipped cream)
5. Gently fold beaten egg white into flour mixture.
6. Add remainder of milk, as needed, to obtain proper thickness of batter. Should pour easily but not be watery.
7. Do NOT over mix the batter. A few small lumps are O.K.
8. Pour 1/3 to 1/2 cup of batter into center of hot waffle iron and bake until steam stops coming from edges of iron.
9. While the waffles are cooking, place 3/4 cup creamy peanut butter in the microwave and melt (about 45 sec or as necessary)
10. Remove waffles when done and pour a generous portion of the melted peanut butter on top.
