Tequila Sweet Hot Sauce
Yield: 2-3 cups
o 15 Habaneros peppers, chopped
o 6 cloves Garlic, minced
o 1 Medium Onion, Chopped
o 4 Tomatoes, Diced
o 1/2 cup Sugar
o 1/2 teaspoon salt
o 1/2 teaspoon black pepper
o 1 Cup Tequila
1. Combine all ingredients in a sauce pan and simmer until the vegetables are tender and soft.
2. If you like your sauce chunky, allow sauce to cool then pour into jars and store in refrigerator.
3. If you prefer a smooth sauce, place the hot mixture in a blender, process till smooth, strain then seal in jars and store in the refrigerator.
Note: Boiling the mixture causes most of the alcohol in the tequila to evaporate. There is no significant alcohol in this sauce, just flavor.
