Pesto Cream Dressing Recipe




Ingredients
* 1 cup fresh basil leaves, coarsely chopped
* 1/4 cup parmesan cheese, freshly grated
* 3 garlic cloves
* 1/4 cup pine nuts, roasted (almonds or cashews make a good substitute)
* 2 Tablespoons olive oil
* 1/3 cup heavy cream
* salt and pepper to taste

Directions
1. In a food processor, blend basil, cheese, garlic and pine nuts until coarsely mixed.
2. Add olive oil and process for 15 seconds.
3. Transfer contents to a small sauce pan and stir in cream.
4. Cook over medium heat until thickened. Season with salt and pepper to taste. Serve hot over chicken, fish or pasta.
