Hollandaise Sauce Recipe
Ingredients
* 4 large egg yolks* 3 Tablespoons lemon juice
* 1/8 teaspoon cayenne pepper
* 1 Tablespoon water
* 4 ice cubes
* 1/2 lb. (2 sticks) unsalted butter, melted
* 1/4 tsp. salt
Directions
1. Place the egg yolks, lemon juice, cayenne and water in the top of a double boiler on top of a medium saucepan of simmering water. Whisk constantly.2. The second the yolk mixture begins to thicken, remove the top of the double boiler (containing the egg yolks) and continue whisking.
3. Turn off the heat.
4. Add four ice cubes to the water in the bottom of the double boiler (not in the egg yolks) to cool it down a bit.
5. Replace the top of the double boiler (containing egg yolks) over the hot water. Whisk in the melted butter, drizzling it in very slowly.
6. Maintain a constant temperature and continue whisking until all the butter is incorporated. Add salt, then taste and correct the seasoning if needed.
Yield: 1-1/2 cups
Goes well over meats, poultry or vegetables.
