Use this Cajun gravy on any meat, fish or chicken. Try this...make the gravy then add chopped chicken breast, spicy sausage or a pork chop to the gravy and simmer until the meat is tender. The flavors will have your taste buds yelling, "oh, yeah!"

Yield: 3 + cups
o 1 large onion, finely chopped
o 3 stalks celery, finely chopped
o 1 cup chopped bell bepper
o 3 cloves garlic, finely chopped
o 1 cup water
o 2 small cans tomato paste
o 1 small can tomato sauce
o 2 tablespoons sugar
o Salt and pepper, to taste
o 2 tablespoons grated Parmesan cheese
o 1 teaspoon Cajun Seasoning
1. Saute onion, celery, bell pepper and garlic in a cast iron skillet. Don't over cook garlic, just lightly brown.
2. Add 1 cup water; bring back to temperature, add all remaining ingredients. Simmer very slowly for 30 minutes. Serve hot.
