Caesar Salad Dressing Recipe 2
This recipe can be made using a whisk but we do not recommend it. A blender is really needed. Be sure to add the oil to the mix very slowly. If you add too fast the mix will not emulsify and you will have a very oily, thin dressing.
Ingredients* 1 egg
* 1/2 teaspoon sugar
* 1 teaspoon Dijon mustard
* 1 teaspoon Worcestershire sauce
* 1/3 teaspoon salt
* 1/2 teaspoon freshly ground pepper
* 1 garlic clove, crushed or 2 teaspoons garlic powder
* 3 tablespoon lemon juice
* 1-1/3 cups white vinegar
* 1/3 - 1/2 cup virgin olive oil
* 1/2 teaspoon dill weed (optional)
* 1 1/2 teaspoons anchovy paste or 4 flat anchovies (optional)
Directions
1. Bring a small pot of water to a boil. Add the egg and cook for 45 seconds ONLY. Remove from heat and allow to cool.
2. Place all ingredients except oil in a blender. Turn blender on medium and blend a few seconds.
3. Turn blender to high setting and add oil slowly. Continue mixing and adding oil until a creamy, smooth dressing is obtained. You may need to add more or less oil to get the thickness you prefer.
Pour dressing generously over romaine lettuce and top with grated Parmesan cheese if desired.
