Potato Soup Recipe

One does not think of potato soup as being a traditional Southern dish, however, it is served often in the South. As a child, we had it often...mainly because it was filling and it was cheap to make. Try this simple recipe and you will also be a potato soup fan.
Ingredients
8-10 potatoes cubed
1/4 cup chives
1/4 cup parsley (dried works O.K. if fresh unavailable)
1/2 c green onion (chopped)
2 cans evaporated milk
1 tablespoon butter
salt and pepper to taste
Directions
1. boil cubed potatos until fork stuck in middle offers little resistance
2. drain water, leaving about 1 to 1 1/2 inchs of water in bottom of pot
3. put all ingredients in pot with potatoes and simmer on medium low until the mixture thickens (about 45 - 60 mins) stir often.
4. Soup will thicken as potatoes cook down 5. Serve with cornbread and vegetable plate of radishes, green onions and sliced cucumber.
