This recipe makes a basic pickling brine that may be used with a variety of vegetables. After making the brine you can add dill weed to your canning jars with cucumbers and have dill pickles. Use the same brine recipe and add garlic and jalapeno peppers to each jar and you have hot, garlic, dill pickles. Or...just add bread and butter pickling spices and you have bread and butter pickles.
In other words you can use this same basic brine recipe and make whatever pickle you want. You are only limited by your own imagination.
Basic Pickle Brine
Yield: 4 quarts
- 1/2 cup pickling salt
- 12 cups water
- 4 cups vinegar
- 1/4 cup sugar (only if pickling something that should be sweet like sweet pickles, bread and butter, relishes, etc. Omit the sugar if making sour pickles (like dill pickles).
Combine all ingredients in a large pot and bring to a boil while stirring occasionally (15-20 min). Reduce heat and keep at a simmer until used. Should be used while boiling hot. Do not save for later use.
