How To Make The Perfect Grilled Cheese Sandwich

Who doesn't love a grilled cheese sandwich? They are quick and easy to make...and filling. Even though it's a simple recipe, there are a few tips to making the "best" grilled cheese.

Step 1: Use fresh white bread and fresh cheese. Whole wheat may be healthier but regular white bread toasts much better.
Step 2: Use good margarine, not real butter. Butter burns easily which will impart an off-flavor to the sandwich. Margarine withstands heat better and browns the bread better for this application.
Step 3: Some advocate melting the margarine and brushing it on the bread. We believe the old fashioned way of spreading the margarine directly on the bread (not melted) works better.
Step 4: Always use a non-stick pan that is big enough to provide room around the sandwich to get a spatula easily under the sandwich (at least 10 inch pan).
Step 5: Grate the cheese and use plenty of it (1/2 cup per sandwich, but use as much or as little as you like).
Step 6: HERE'S THE SECRET to a perfect grilled cheese. Cook on low heat. This does two things...it toast the bread perfectly and it gives the cheese time to melt properly. If you use the correct temperature, it should take just over 4 minutes per side.
...and, of course, serve it hot right from the stove.

O.K. here it is, it's pretty simple:

Ingredients (per sandwich)
* 2 slices of bread (you can use any kind...but fresh, plain, white bread works best)
* good quality margarine (enough to cover one side of each slice of bread)
* 1/2 cup cheese, grated (cheddar melts great and is our favorite but you use can use American or your choice)

Directions
1. Heat a non-stick frying pan on LOW HEAT (about number 3 on my stove)
2. Spread margarine on one side of each slice of bread.
3, Place one slice of bread in the frying pan, margarine side down.
4. Place as much cheese as you want on top of the bread
5. Place the other slice of bread on top of the cheese, margarine side up
6. Cook 2 or 3 minutes then lift the sandwich with a spatula and peek at the bottom. If it's already dark brown or burnt, turn down the heat. At this point the margarine should be melted and the bread should just be taking on color.
7. Continue this process of cooking for a minute then taking another peek. When the bread is golden brown, flip the sandwich over and repeat the process. As stated above, it should take about 4 minutes per side to obtain a golden brown. If it takes much less, your stove is too hot.
Serve immediately.

Want To Rev It Up A Notch?
1. Add sliced tomato with the cheese.
2. Add sliced olives and or sliced jalapeno pepper.
3. Add sliced mushrooms
4. Coat the bread with peanut butter before adding the cheese (goes on the side of the bread opposite of the margarine...in other words...inside the sandwich with the cheese).
