Homemade Stock Recipes
Stock is used extensively in Cajun cooking. If you cook Cajun style frequently, you should make your own and keep it on hand. In a pinch, you may use store-bought broth but it will not have the flavor of home made. Additionally, it will not be as healthy as home made. Commercial broths are loaded with salt and other stuff you can not pronounce.
Homemade stock will keep several days in the fridge and you can freeze it for months.
