Cajun Pork and Pecan Stir-Fry Recipe
Here's a wonderfully tasty recipe for a main dish.
Ingredients
* 1 pound pork stir-fry strips (loin, fresh pork leg or tenderloin)* 1 1/2 tablespoons Cajun seasoning (Recipe Here)
* 1 tablespoon vegetable oil
* 3/4 cup chopped celery
* 1/2 cup chopped onion
* 1 clove garlic, crushed
* 1 green bell pepper, seeded and cut into 3/4-inch squares
* 3/4 cup toasted pecan halves (see note below)
* 3 cups hot cooked rice
Directions
1. In medium bowl toss together pork strips with Cajun seasoning to coat evenly.2. In large nonstick skillet heat oil over high heat, stir-fry pork until nicely browned, about 4-6 minutes.
3. Add celery, onion, bell pepper and garlic to skillet and cook, stirring often, until onion is almost translucent, about 3-4 minutes.
4. Add pecans and while stirring, cook just long enough to heat through, about 2 minutes. Serve over rice.
Serves four.
Note: To toast pecans, place on a cookie sheet and cook under broiler until the pecans just begin to color. WATCH THE ENTIRE TIME! Do not walk away from them, they will burn quickly!
