Crab Salad Recipe
Cajun Crab Salad is distinguished by the salad dressing which may be made a variety of ways. Some make it spicy, some much milder. We believe the milder version is more authentic Cajun. We are providing both versions here.
Ingredients
For each individual salad:6-8 crisp lettuce leaves
1 hard boiled egg, sliced
4 cherry tomatoes
1/4 cup chopped green onion
1 lemon wedge
1/2 cup crab meat
Directions
1. Place crab meat on a bed of lettuce leaves2. Place cherry tomatoes and lemon wedge on side of plate
3. Sprinkle top with chopped green onion and boiled egg slices
4. Pour 1/4 cup dressing over entire salad (see dressing recipes below)
Note: Cajun Crab Salad is frequently served with a wedge of cantaloupe
Mild Dressing
* 1 cup mayonnaise* 1 cup heavy cream
* 1/4 cup chili sauce
* 1 teaspoon Worcestershire
* 2 tablespoons lemon juice
* 1/4 cup chopped bell pepper
* 1/4 cup finely chopped celery
* salt and pepper to taste
Mix all ingredients well in a medium bowl and chill 30 minutes before use.
Makes enough for 4 salads with a little extra for the table.
Spicy Dressing
* 1 med. garlic clove* 1 cup mayonnaise
* 1 tbsp. ketchup
* 2 tsp. mustard
* 2 tsp. prepared horseradish (real horseradish, not horseradish spread)
* 1/2 tsp. ground dried tarragon
* 1/2 tsp. ground dried oregano
* 1/4 tsp. Worcestershire sauce
* 1/8 tsp. cayenne pepper
* Salt to taste
Makes enough for 4 salads
