Baked Cajun Chicken Wings Recipe


This looks a little overwhelming with all the spices, but it is really easy to make. Takes less than an hour and it's so good!

Ingredients
* 12 Chicken wings -- tips removed
* 3/4 teaspoon Caraway seeds
* 1/2 to 3/4 teaspoon cayenne pepper
* 3/4 teaspoon Ground cumin
* 3/4 teaspoon Ground coriander
* 4 Garlic cloves -- finely minced
* 1-1/2 teaspoons Dry mustard
* 2 teaspoons Paprika
* 3/4 teaspoon Dried thyme
* 1/2 teaspoon Salt
* 2 tablespoons Brandy - you may substitute 4 tablespoons red wine.
* 2 tablespoons Fresh lemon or lime juice

Directions
1. Defat the chicken wings by cooking them in boiling water for 10 minutes. Drain and set aside to cool.
2. Preheat oven to 375 degrees.
3. Using a food processor or the back of a spoon, grind together the caraway seeds, cayenne pepper, coriander, cumin, garlic, mustard, paprika, thyme and salt until a fine powder.
4. Add the brandy (or wine) and lemon (or lime) juice to the pulverized herbs and stir into a thick paste.
5. With a pastry brush, cover both sides of each wing with the herb paste.
6. Arrange the chicken wings on a baking sheet. Bake until the skin turns deep brown and is quite crisp, approximately 30 minutes.

Note: Most cooks know this, but when you cook with brandy or any other alcoholic beverage, most of the alcohol evaporates during the cooking. There will not be any significant alcohol in your finished dish. It is there for the flavor not the alcohol.
