Cajun Kitchen Sink Soup Recipe
One cold Sunday afternoon I decided to clean out the fridge by making some soup. The key ingredients were spicy sausage, bell pepper, onion and celery. This just happens to be the key ingredients for many Cajun recipes. So, I started adding everything but the kitchen sink in the pot. The end product resembled something between Italian and Cajun. But, it was pretty good.
You will see that the ingredient list is quite long. Don't worry about it. Just use what you have. As long as you start with onion, celery and bell pepper you can add what every you want. You may not have tomatillo in your kitchen. I just happen to have some left over from making salsa. So, I threw it in. If you have some left over beans...throw 'em in. Got a can of corn kernels? Throw 'em in. The point here is that the long list of ingredients below does not have to be followed precisely. Just use what you like...within reason. (I wouldn't add ice cream or sardines). The key is to taste as you cook. Adjust flavors by adding ingredients until you like it.
Ingredients
* 3 cups water* 1 (10 oz) can diced tomatoes with chili's
* 1 (14.5 oz.) can diced tomatoes
* 1 (26 oz.) can spaghetti sauce (garlic and onion works good)
* 2 tomatillo (diced)
* 1 tablespoon basil
* 1 tablespoon oregano
* 1 tablespoon Old Bay Seasoning
* 1 medium onion, diced
* 1 medium bell pepper, diced
* 2 stalks celery, diced
* 3 Hot Sausages, cut into bite size chunks
* 4 cloves garlic, minced
* 1 teaspoon seasoning salt
* 3 dried bay leaves
* 1/2 cup ketchup
* 2 tablespoons honey
* 1/2 can Pepsi (or any cola)
* 1 teaspoon unsweetened cocoa
* Salt and pepper to taste
Directions
Put everything in a large soup pot and bring to a boil. Reduce heat and simmer until all vegetables are tender, then simmer another 20 minutes. When you think it is done, taste, then taste again. Add any additional ingredients to suit your taste.The recipe above made about 8-10 servings. Yours may vary according to what you put in it.
Tips:
1. If too watery, add ketchup and/or tomato sauce (or paste).
2. If too thick, add water
3. If bland, add salt and more spices.
4. Freeze left over for up to 6 months
