Buttermilk Baked Chicken Recipe
This simple buttermilk baked chicken recipe has a little spicy kick with a crunchy crust. It is easy to make even for the inexperienced cook.
Ingredients* 1 1/2 lbs. boneless, skinless chicken
* 1/2 cup low-fat buttermilk
* 2 teaspoons hot pepper sauce
* 1/2 teaspoon salt
* 1 1/2 cups corn flakes, finely crushed
* 1/3 cup unflavored dry bread crumbs
Directions
1. Combine buttermilk, hot sauce and salt in a large zip lock plastic bag. Add chicken, seal and toss to coat chicken well. Chill in refrigerator for one hour.
2. Heat oven to 425 degrees F.
3. In another large plastic bag, combine cornflakes and bread crumbs.
4. Add chicken pieces, one at a time, and toss to coat with bread crumb mixture.
5. Arrange chicken on a foil lined baking sheet. Coat with cooking spray.
6. Bake 30-35 minutes, turning after 20 minutes.
