Bourbon Sweet Potatoes Recipe
Classic Southern sweet potatoes with a touch of bourbon flavoring. With melted butter and marshmallows on top, it doesn't get any better than this.

These yummy sweet potatoes are very easy to make. Note that the bourbon only provides flavor. There is no significant alcohol in the dish since the alcohol evaporates during cooking.
Sweet potatoes and yams grow in different shapes and sizes so when cutting the potatoes, use the method most suitable for the potato shapes. Some will sit flat and the tops may be cut off. Some are more egg shaped and it is easier to cut lengthwise. Either method works fine.
Ingredients
* 6 medium sweet potatoes* 1/4 cup butter
* 3 tablespoons bourbon
* 3 tablespoons milk
* 1 tablespoon firmly packed brown sugar
* 1/2 teaspoon nutmeg
* salt and black pepper to taste
* 1/4 cup miniature marshmallows
* 6 pecan half's
Directions
1. Bake the sweet potatoes for 50 minutes in a 400 degree F. oven, or until they can be easily pierced with a fork.2. According to the shape of the potatoes, either cut a slice off the top of each potato or cut in half lengthwise. and scoop out the inside taking care not to break the shell.
3. In a bowl, mash the potatoes then add the butter, bourbon, milk, brown sugar and nutmeg. Beat together until well blended, then add the salt and pepper to taste.
4. Spoon the mixture into the shells. Garnish with the pecan halves and miniature marshmallows.
5. Set the oven heat to 350 degrees F. and return the potatoes to the oven. Bake the potatoes until the marshmallows just start to brown (5 to 15 minutes).
