Apple Brown Betty Recipe
I can't help but wonder who was Betty? Did she create the recipe or did someone name it in her honor? In either case, it was a long time ago because Apple Brown Betty has been around for many years. Apple Brown Betty may be made several different ways but here's my mom's recipe.
Ingredients
* 4 cups bread crumbs(store bought or make your own with dried out bread in a food processor)
* 4-5 cups baking apples (tart like Granny Smith), peeled, cored, sliced
* 1 cup brown sugar
* 1 teaspoon cinnamon
* 1/4 tsp salt
* 3 tablespoons lemon juice
* 1/4 cup water
* 4 tablespoons margarine (or butter)
Directions
1. Pre-heat oven to 350 degrees F.2. Grease a 11 x 9 baking dish. (or a 9" pie plate will work).
3. Sprinkle approximately 1/3 of the bread crumbs over the bottom of the baking dish.
4. Place 1/2 of the apples over the bread crumbs.
5. Mix together the sugar, cinnamon, and salt. Put 1/2 of this sugar mixture over the apples.
6. Add another 1/3 of the bread crumbs and the rest of the apples.
7. Sprinkle with the remainder of the sugar mixture.
8. Top with the final 1/3 of the bread crumbs.
9. Sprinkle the lemon juice and water over the top of the Apple Brown Betty.
10. Cut the margarine (or butter) into small chunks and spread around the top.
11. Cover with aluminum foil and bake in the pre-heated oven at 350 degrees F. for 30 minutes.
12. Remove cover and bake an additional 15 minutes or until top is brown and juice is bubbly.
Serve hot or cold. Good with ice cream or whipped cream on top.
